Sunday Brunch is sorted!! Try these Chiplotle Baked eggs with Chorizo !! Easy as and super fast to make, all you need is: Feeds 4 • 4 Criollo chorizo sausages • 1 tin of chopped tomatoes • 1/2 Red capsicum, diced • 1 medium onion, diced • 1/2 tsp chipotle chilli paste • 5 white mushrooms, chopped • 2 garlic cloves, finely chopped • 1 tsp sugar • 4 eggs • Some cheese to put on top like Feta o whatever you have in the fridge ! • Fresh or dry herbs such as thyme or oregano. Cut the chorizo into medium size slices, heat a deep pan with a bit of olive oil. Once hot, add the chorizo, garlic, onions and capsicum. Cook for five minutes, then add the mushroom and cook until golden. Now in goes the tin of tomatoes, fill the empty tin with water and pour it over. Bring the heat down until you have a gentle simmer, add the chipotle, sugar, salt and pepper, taste and adjust. Cook for five more minutes and add the chopped herbs, stir. Transfer your sauce to a deep oven-proof tray, crack the eggs on top and finish the dish wit some grated or crumble cheese depending on what you have. Take to the oven (have it on 200 grill) for five minutes, check, you want the egg white to be cooked and the yolk still running so don’t leave them in for too long !! Serve and eat with some bread to soak all that delicious sauce !! Let’s honour Taco Tuesday with this easy and delicious Mexican recipe using our Chilli Chorizo Sausages !!🌶 Crispy Potato and Chorizo Tacos : 🌮 Serves 4 3 agria potatoes, washed and diced 1 package Zamora Chilli Chorizos (around 5-6 chorizos) 1 large onion, chopped 100 gm Feta cheese, crumbed 1 bunch of Fresh coriander Corn tortillas Pickled red onions or jalapeños 4 Limes Boil the chopped potatoes, once tender drain the water and transfer to a oven tray with oil, salt and pepper. Roast until crispy and golden. Meanwhile, cut your chorizos lengthwise and peel the casing off leaving just the mince meat. Heat up a pan with a bit of oil and cook the onions until golden. Once ready add the chorizo and cook until some fat breaks out and the chorizo starts sizzling. Take the potatoes out of the oven, add to your pan and mix through. In another pan start warming up your tortillas. Fill each tortilla with the chorizo and potato mixture and top it with micro or chopped coriander, pickled red onions and feta.
